As Alaskan’s, we try to make the time as much as we can to get out there into the hinterlands of Alaska. It can be challenging, since we’re tied to watering our gardens, but we do figure it out!
A big component of our camping trips is the food. I don’t know if you all do this, but for us, the food is often our own produce straight out of our gardens! There’s something uniquely awesome about enjoying Alaskan grown foods in the back country of Alaska!
We have a tendency to eat fairly simply over the summer. Greens plus protein is pretty much our go-to on more nights than we can count! As the various produce starts coming in, we do tend to mix things up a lot more. But, simple meals like a “ribeye salad” is sure hard to beat. Especially when you have a “million dollar” jaw dropping Alaskan backdrop to keep you company.
In case you’re looking for some pro tips on how to get that produce out there? We do almost all the cleaning prep work at home and just stuff everything into zip lock bags. We’ll often do our slicing and dicing in camp. Like many Alaskans, we have high end coolers that are designed to keep things cold for days. We usually use frozen plastic bottles or other ice packs to keep things cold, it’s a lot cleaner and easier than using ice.
Some days, we do long for the freedom to be able to do a lot more camping and outdoor recreation. Our gardens do tie us closer to home for much of the summer. While many of our systems are automated and able to go some time, many of our gardens are not. Our “big picture, end game” is to get to 100% automation, but that’s a really tough nut to crack and we’re years from that goal.
We hope you all are having some wonderful first days of summer! I know we are! We’re excited about the next couple months, things are really coming along here. We should have tomatoes coming in soon and a litany of other things!
But, for now, we’ve got more gardening to do! It takes a lot of effort for us to be gone a couple nights, but it was totally worth it!
